Dine and unwind: Hyatt Regency Hill Country rolls out new menus

Hyatt Regency Hill Country Resort and Spa, a premier destination nestled on 300 secluded acres in San Antonio, recently announced the debut of new seasonal menus at all four on-site dining venues.

Hyatt Hill Country’s revamped restaurants
Guests have more dining options with the resort’s enhanced menu items and epicurean delights. Upscale Texas-inspired cuisine can be found at Antlers Lodge. Springhouse Café entreats visitors to enjoy its bold Southern and Tex-Mex flavors. House-made barbeque and elevated pub-style food can be found at Charlie’s Long Bar and delicious small plates and “Bar Jars” are available at the newly opened Woodbine Bar.

Experience elevated Texas cuisine at Antlers Lodge
Antlers Lodge, the resort’s fine dining restaurant, introduces an updated menu that celebrates local ingredients and expertly prepared game and steakhouse fare. New dishes showcase the region’s diverse culinary heritage, such as the blackberry balsamic South Texas antelope sourced from Broken Arrow Ranch in Ingram, TX, a brown sugar bourbon double-bone pork chop, and a citrus-brined semi-boneless half chicken.
The new selections also feature a hot Cajun seafood dip; whipped sweet potato and goat cheese; a watermelon salad with whipped herb feta, agave-infused watermelon and jalapeno, and seared halibut with mango salsa, snap peas and a ponzu sauce.
These new dishes complement the restaurant’s signature steak and game selections, including a chili-rubbed elk tenderloin, a black truffle-crusted bison tenderloin, a Lone Star bone-in ribeye, and center-cut filet mignon.

Guests can also enjoy elevated family-style sides such as grilled asparagus with Manchego, sweet chili crispy Brussels sprouts, warm elote and aged white cheddar macaroni and cheese.
New dessert selections feature a crème brulée with mixed seasonal berries; coffee cheesecake with a brown butter graham crust, and a chocolate Texas sheet cake with caramelized pecans.
Refreshing signature cocktails include a Spicy Basil Collins with basil-infused Tamarindo Vodka and Licor 43, King Paloma with single-barrel Patron Reposado, blood orange and grapefruit juice, and Hendricks Hibiscus with Hendricks Gin, hibiscus syrup, lime and lemon juice, egg white and a smoke bubble.
Springhouse Café adds bold Southern and Tex-Mex flavors
Springhouse Café’s updated menus emphasize regional comfort food with a fresh twist. Highlights from the new lunch offerings include poblano cheese empanadas, cotija candied jalapeno dip, candied bacon deviled eggs, brisket tacos and a classic shrimp po’boy. It also features hearty sandwich options, including a black bean burger, smoked turkey club and grilled chicken sandwich.
For dinner, guests can enjoy warm Southwest cornbread, classic fried green tomatoes, brisket grilled cheese, Bic Mac’s Cider-brined pork chop, asada baked potato, and herb-seared salmon with edamame succotash, corn puree and micro-green salad.
Desserts include seasonal favorites such as strawberry rhubarb bars, chocolate layer cake, pina colada upside-down cake and lemon blueberry tiramisu.
Charlie’s Long Bar serves up house-smoked BBQ and pub classics
At the newly renovated Charlie’s Long Bar — boasting the longest copper-top bar in Texas — guests will find a selection of local draft beers, a full bar and a menu featuring house-made Texas barbeque and other sports-bar favorites like a giant Bavarian pretzel, loaded nachos, smoked chicken wings, brisket mac and cheese, Texas burger and more.
Plus, sweet treats include shining stars like strawberry cheesecake in a jar, a banana-brownie skillet and local Texas floats served with Blue Bell ice cream.

Sip and snack in style at the brand-new Woodbine Bar
The newly opened Woodbine Bar enhances the resort’s culinary landscape with a menu tailored for social dining in a sophisticated yet relaxed setting. The bar’s standout feature is its signature “Bar Jars,” offering an array of gourmet snacks such as whipped goat cheese with cracked lavash, marinated mixed olives, rosemary-roasted cashews, candied pecans and pimento cheese mousse with flatbread.
Additional offerings include a Texas charcuterie board with pecan-smoked Spanish-style chorizo, farmstead cheeses and pickled okra, as well as dishes such as Gulf shrimp and colossal crab cocktail, slow-braised lamb shank and Wagyu beef sliders with honey chili crisp and truffle cheese.
For a sweet finish, guests can indulge in house-made truffles with flavors including white chocolate raspberry, dark chocolate ganache and caramel pecan cluster.
Best enjoyed on the adjoining outdoor porch is one of the many refreshing seasonal cocktails, such as the Welcome Daisy, made with Hyatt Hill Country’s signature single barrel Patron Reposado, Licor 43, orgeat, lemon and orange bitters. Or guests can sip on the Spicy Cucumber Martini with Smirnoff Tamarindo, ginger, lime and cucumber.
