Sparrow brings eclectic American cuisine to Peoria’s Trailhead

Sparrow, the newest culinary venture by Valley-based Sky Restaurant Concepts, proudly announces the opening date of Saturday, September 20, at The Trailhead in Peoria. Featuring an American Eclectic menu that honors the dynamic fusion of cultures, flavors and influences that embody the depth of modern American cuisine, the restaurant is ready to share its vision of curated offerings and inspired atmosphere with guests.

Community-focused dining with eclectic American menu

The menu offers a variety of fresh and flavorful options, including five robust salads and oysters served raw or grilled with miso butter. Entrees range from Short Rib Ragu Tagliatelle with wild mushrooms to Seafood Hot Pot for Two, as well as a 10-ounce Charbroiled Prime Grade Filet Mignon. Guests can also enjoy seasonal fish.

“We’re thrilled to finally open our doors and share what we’ve been passionately creating for the Valley to enjoy,” says Emily Ganem, co-owner and creative director of Sky Restaurant Concepts. “This is a place for the community to gather, savor exceptional flavors, and experience the energy and hospitality that Peoria deserves. Sparrow is eager to make every visit memorable.”

“Opening this concept is the culmination of years of devotion and ingenuity,” adds Schuyler Estes, executive chef of Sparrow. “My vision has always been to craft dishes that celebrate bold flavors, intentional techniques and the stories behind each ingredient. We know we have put together something truly unique for the Arizona culinary scene.”

Cocktail program and modern design

Sparrow’s cocktail program enriches the dining experience and is crafted by Libby Lingua and Mitch Lyons, the inventive duo behind Highball Cocktail Bar. Libby Estes, operations manager at Sparrow, guides the creation of meaningful and engaging experiences for team members and guests.

Sparrow’s 4,300-square-foot space features an open-concept layout, a full bar with lounge seating, and a spacious covered patio, all of which were designed through a collaboration between Ganem Companies, ALINE Architecture and Social Design Studio. The Trailhead is a 40-acre mixed-use development that will serve as the commercial crown jewel of the Happy Valley Corridor and a central gathering place for residents and visitors.

“We are thrilled that Sparrow is bringing its iconic new restaurant concept to The Trailhead,” says Jim Pederson, founder and chairman of Pederson Group, the project’s developer. “With its inventive cuisine and craft cocktails, Sparrow will offer Peoria residents the quality dining experience they have been clamoring for near their homes.”
