In 2023, Downtown Salt Lake City welcomed Le Méridien & Element Salt Lake City Downtown, home to the first full-scale rooftop bar to grace the city’s skyline. In addition to Van Ryder, the property’s rooftop bar, guests can dine at the on-site Urban Brasserie, Adelaide, take advantage of the rooftop fitness center and pool and even bring along their furry friends, among other thoughtful offerings.

Each of Le Méridien’s 144 modern rooms features floor-to-ceiling windows with sweeping views of Downtown Salt Lake City and ample natural light. I stayed in a classic king room with a comfortable bed, mini-fridge and coffee maker — the essentials needed for an out-of-town visit. The hotel also offers double-bed rooms and suites, making it a comfortable option for families and larger groups.
Dining at Adelaide
Let’s talk about the genius of Le Cordon Bleu–trained chef Jacqueline “Jackie” Siao. Her personality is as vibrant and dynamic as her cuisine, which blends New Orleans and French influences with Cajun undertones. Siao isn’t afraid to have fun, in person or on the plate.
Notable dishes from Adelaide during my visit included the glazed pork belly, crisped to perfection, and the rich, flavorful shrimp and white cheddar grits. As for dessert, I’m already dreaming about the next time I can get my pavlova fix. This heavenly dessert combines lemon curd and raspberries tucked into a delicate meringue shell, garnished with strawberries and a pistachio tuile.
Adelaide also serves breakfast and lunch, with menu items available to accommodate a variety of dietary needs.

A standout zero-proof beverage program
During my Salt Lake City visit, Hilary Sheinbaum, author of “The Dry Challenge,” took us on a tour of Le Méridien’s creative mocktail and non-alcoholic offerings. Standouts included the Honey Badger Redux, crafted with honey, lime juice and jalapeño, a zero-proof potion with a spicy kick.

Le Méridien’s rooftop amenities are a true highlight of the property. In addition to dining and cocktails at Van Ryder — as previously mentioned — guests can enjoy a rooftop fitness center and pool with sweeping views of the bustling cityscape and the Wasatch Mountain Range.
